There is nothing quite like a dollop of whipped cream to add an extra layer of lusciousness to fruit salads. OK, two dollops. Whether Nebraska cooks are stirring up dishes with candy bars, apples or other fruit, whipped cream is a smooth operator.

Raspberry Fluff Salad

Nebraska cooks get their daily doses of fruit and sweetness with this sugary and creamy salad that doubles as dessert. Eating healthy has never tasted so good.

Ingredients

  • 6 oz frozen raspberries
  • 1/2 cup + 1 tsp sugar
  • 1 apple, washed, cored and cubed
  • 1 can mandarin oranges, drained
  • 1 pear, washed, cored and cubed
  • 1 cup green grapes, washed and halved
  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract

Serves 6

Method

In microwave safe bowl, microwave frozen raspberries until thawed. Add 1/2 cup sugar and cook 2-3 minutes. Remove from microwave and stir to make sauce.

Place remaining fruit in large bowl. Add raspberry sauce and mix well. Allow to cool in refrigerator for 3 hours. In medium bowl, whip heavy whipping cream, vanilla extract and remaining sugar until peaks form. Just before serving, fold the whipped cream mixture into chilled fruit mixture.

Fruit Eyed Salad

Whipped cream fans might raise an eyebrow at the thought of tossing pasta into their light and fluffy favorite. After trying this flavorful salad, spoons will rise for another heaping taste.

Ingredients

  • 1 cup acini de pepe pasta
  • 3/4 cup sugar
  • 1 Tbsp flour
  • 1/2 tsp salt
  • 2/3 cup pineapple juice
  • 1 egg, beaten
  • 2 tsp lemon juice
  • 16 oz mandarin oranges, drained
  • 8 oz maraschino cherries
  • 20 oz pineapple tidbits, drained
  • 1 cup miniature marshmallows
  • 8 oz nondairy whipped topping

Serves 6

Method

Cook acini de pepe pasta according to directions on package. In saucepan, combine sugar, flour, salt, pineapple juice and egg and cook over medium heat until thickened. Cool sauce mixture and add lemon juice and pasta. Cover and chill one hour. Stir in oranges, cherries, pineapple, marshmallows and whipped topping. Chill an additional hour before serving.

Apple Snickers Salad

Candy bars and apples go good together in this recipe combining both treats with a velvety and sweet helping of whipped cream. Don’t snicker.

Ingredients

  • 4 Granny Smith apples, washed, cored and diced
  • 2 tsp lemon juice
  • 1 cup roasted peanuts
  • 4 full-size Snickers original single candy bars (1.86 oz each), chopped in chunks
  • 8 oz nondairy whipped topping or homemade whipped cream

Serves 6

Method

In large bowl, mix apples, lemon juice, peanuts and candy bars. Fold in the whipped topping. Refrigerate minimum of 30 minutes before serving.
