Hearty enough for a full table of rough-and-tumble riders, this dish features the best of the west with colorful, fresh ingredients and a punch of protein that will keep energy up when the bulls start to buck – at home, or in the ring. Tex-Mex flavors combine with the tang of downhome French dressing for a meal that’s sure get guests clamoring for more. Karen Johnson of Syracuse sums up the mass appeal of this pasta dish, saying simply, “I never bring home any leftovers.” But, she adds, this make-ahead meal can keep for several days if you manage to lasso any extra.

Number of Servings: 12
Ingredients: 8 oz spiral pasta
1 lb ground beef
1 pkg taco seasoning
1 bottle Western dressing
1 green pepper
1 bunch green onions
1 can black olives
1-2 tomatoes
Directions: Brown hamburger and add taco seasoning according to package directions. Cook pasta; drain and chill. Dice vegetables, mix all and enjoy.
