Blue-Ribbon Broccoli Salad

This cheesy, bacon blend is a big hit at potlucks and family functions, with just a kick of sweetness to get the crowds coming back for more. Halve the recipe to feed a small family, or easily craft a quick, big batch for friends or a small army.

Number of Servings: 12-16
Ingredients: 5 cups broccoli florets
5 cups cauliflower florets
6-12 slices bacon, cooked and crumbled
2 cups cheddar cheese, grated
1/2 cup red onion, chopped
1/2 cup toasted slivered almonds
1/2 Craisins
1 cup mayonnaise
1/3 cup Splenda
2 Tbsp red wine vinegar
Directions: In a large salad bowl, toss broccoli, cauliflower, bacon, cheese, onion, almonds and Craisins. In a small bowl, combine mayonnaise, Splenda and vinegar. Pour dressing over salad; toss to coat. Cover and refrigerate for 1 hour. Makes 12-16 servings. Save time by substituting bacon bits for the bacon slices, where 1 Tbsp of bacon bits equals 1 slice of bacon.
