Rice and Raisin Salad

Noreen Crawford, our food editor, tossed this delicious and nutritious salad idea around after thinking of Indian meals with her English sister-in-law, Colleen, who would punch up a dish with healthy ingredients. “We have onions for zip, nuts for protein, texture, and raisins bring on the sweetness and fruit factor,” Crawford said.

 

3 cups cooked, cold basmati rice

1 ½  cups cooked small peas

1  cup raisins

3/4 cup sliced green onions

1  cup sliced almonds or whole cashews

1  cup lemon juice

1/2 cup olive oil 

salt and pepper to taste

 

Curry-Lemon Vinaigrette

1/2  cup olive oil

1/4  cup lemon juice

1/4  cup water

1/2  tsp curry

1/4  tsp garlic salt 

pinch of pepper

 

Serves 6

Combine rice, peas, raisins, onions and nuts. Then toss together.

In a small container, blend lemon juice, olive oil, salt and pepper. Dress up that rice and raisin mixture with lemon vinaigrette.

 

Sour Cream Raisin Pie

Jenny Colby Larington of McCook treated us to this dessert that’s a delicious way to top off a spring picnic. It’s part of a family cookbook she’s put together with her mom, Liana. Creating this pie took some detective work, since the recipe’s guardian was Jenny’s great-grandmother, who was born in 1900. Cleyone Whisler apparently preferred keeping those baking secrets in her head and not on paper, but there’s a sweet ending to this tale.

 

1 cup sour cream 

1  cup sugar 

1 cup raisins 

2 eggs 

1  tsp clove 

1  tsp cinnamon 

1/4  tsp allspice  

pinch of salt 

1  Tbsp flour   

pie crust

 

Serves 6

Boil raisins until soft, and drain water off. Mix raisins with sour cream, sugar, eggs, clove, cinnamon, allspice, salt and flour. Pour into an unbaked 10-inch pie shell. Put top crust on and bake in an oven at 350° for about an hour. Top off with whipped cream and more raisins.
